Healthy and easy breakfast meal prep for busy mornings

Mornings madness and rush is something that we all regularly or at least at some phase in our lives have witnessed. All the countless mornings when you get up with your alarm after hitting the ever enticing snooze button three times usually end with you leaving your house without breakfast or just having a quick mug of coffee or a tiny carton pack of chocolate almond milk. The chaos that is leaving your house on time so that you can make it for whatever it is you are heading out for, is something a lot of us struggle with daily. This is true for a lot of people like moms or dads rushing to prep for their kids’ morning routine and school lunch, people heading to the office or for meetings, teens rushing so they don’t miss their first lecture, and so on. 

If you often find yourself in the middle of crazy morning rushes and want to stay healthy by grabbing a quick but healthy lunch then here are a few great options for you. A great way to ensure that you always eat a filling and healthy breakfast that keeps you going through the days is to meal prep. Meal prepping when it comes to breakfast isn’t as grueling a task as maybe meal prepping for dinner. Depending on if you live by yourself or if you are in charge of breakfast for your entire family, it might be a fairly long or short task, but you can tackle it on a Sunday when you have time. You can put together chicken or veggie spreads by mixing together either chicken breast mince or finely chopped veggies with spices, seasonings, or mild masalas that you love. Make sure to keep the spice quotient on the lower spectrum since it is a meal that goes into your stomach after a long period of fasting. This spread of chicken or mixed veggies can easily be frozen in a little container – one for each day of your week. All you need to do is get the container out of your freezer and dunk it into the fridge the previous night so that it isn’t frozen. When you are ready to have your quick breakfast, all you will need to do is grab the container out of the fridge and heat the entire thing in the microwave or you could first spread it onto your bread and then heat it. 

You can make this simple, quick, and healthy breakfast even more delicious by adding some feta cheese or hot and sweet sauce. Pair it with a healthy almond milk smoothie and you should be good till lunch.
